Ingredients

1 lb fresh green beans, trimmed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon lemon juice

1/4 teaspoon red pepper flakes (optional)

Zest of 1 lemon

1/4 cup slivered almonds (optional for extra crunch)

Instructions

Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for 3-5 minutes until they are tender-crisp.

Ice Bath: Prepare a bowl of ice water. Once the green beans are blanched, immediately transfer them to the ice bath to stop the cooking process. After 5 minutes, drain and set aside.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.

Combine and Season: Add the blanched green beans to the skillet with the garlic. Toss them to coat with the oil and garlic. Season with sea salt, black pepper, and red pepper flakes if using. Sauté for 5-7 minutes, stirring occasionally, until the beans are heated through and slightly blistered.

Add Lemon: Remove the skillet from heat and drizzle the lemon juice over the green beans. Toss in the lemon zest and slivered almonds for added texture, if desired.

Serve: Transfer the green beans to a serving dish and enjoy them warm as a fresh side dish!
