4 boneless, skinless chicken thighs

2 tablespoons olive oil

2 cloves garlic, minced

1 lemon (zested and juiced)

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup green beans, trimmed

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, thyme, rosemary, salt, and pepper. Whisk together until well blended.

      Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let the chicken marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).

        In a large oven-safe skillet, arrange the marinated chicken thighs in a single layer. Surround them with the cherry tomatoes and green beans.

          Pour any remaining marinade over the vegetables.

            Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Once done, remove from the oven and let it rest for 5 minutes.

                Garnish with freshly chopped parsley before serving.
