Ingredients

1 cup unsalted butter

2 cups packed brown sugar

1 cup light corn syrup

1 can (14 ounces) sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup chopped nuts (optional)

Sea salt for sprinkling (optional)

Instructions

In a medium-sized heavy saucepan, melt the butter over medium heat.

Once the butter is melted, stir in the brown sugar, corn syrup, and sweetened condensed milk. Mix well to combine.

Increase the heat to medium-high and bring the mixture to a boil, stirring constantly.

Once it reaches a steady boil, reduce the heat to medium and continue to stir for 5 minutes. Keep an eye on the bubbling caramel to ensure it doesn't burn.

After 5 minutes, remove the saucepan from the heat and stir in the vanilla extract and salt. If you're adding nuts, fold them in at this point.

Quickly pour the caramel mixture into a greased 8x8 inch baking dish or lined with parchment paper for easy removal.

Allow the caramels to cool at room temperature for at least 30 minutes before cutting them into squares.

If desired, sprinkle a little sea salt on top before they fully set for a sweet-salty surprise.

Store the caramels in an airtight container at room temperature for up to 2 weeks (if they last that long!).
