Ingredients
  

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), chopped

1 can (15 oz) tomato sauce

1 cup beef broth

1/4 cup ketchup

2 tbsp Worcestershire sauce

1 tbsp brown sugar

1 tsp mustard (yellow or Dijon)

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

2 cups diced potatoes (can be substituted with carrots for a twist)

1 cup frozen corn

2 tbsp olive oil

Fresh parsley, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until they are soft, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Cook the Meat: Push the sautéed veggies to one side of the pot and add the ground beef. Break it up with a wooden spoon and cook until browned, about 6-8 minutes. Drain excess fat if necessary.

      Make the Stew Base: Once the meat is cooked, stir in the tomato sauce, beef broth, ketchup, Worcestershire sauce, brown sugar, mustard, smoked paprika, salt, and pepper. Mix well to combine all the ingredients.

        Add the Vegetables: Add the diced potatoes and corn to the stew mixture. Bring it to a simmer and reduce the heat to low. Cover the pot and allow it to cook for about 25-30 minutes, or until the potatoes are tender.

          Adjust the Seasoning: Taste the stew and adjust seasoning if needed. If you like it a bit spicier, a dash of hot sauce can be added at this stage.

            Serve & Garnish: Ladle the Sloppy Joe Stew into bowls and garnish with fresh parsley for a pop of color. Enjoy this hearty meal with crusty bread or over rice!
