1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 green bell pepper, diced

1 carrot, diced

1 can (15 oz) diced tomatoes

1 cup beef or vegetable broth

1/2 cup ketchup

2 tbsp Worcestershire sauce

1 tbsp brown sugar

1 tsp mustard powder

1 tsp chili powder

Salt and pepper to taste

2 cups frozen mixed vegetables (peas, corn, and green beans)

Fresh parsley for garnish

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion, green bell pepper, and carrot. Sauté until the vegetables are softened, about 5 minutes.

    Stir in the minced garlic and ground beef (or turkey) to the pot. Cook, breaking the meat apart with a spoon, until browned and cooked through, about 7-10 minutes. Drain excess fat if needed.

      Add the diced tomatoes (with juice), broth, ketchup, Worcestershire sauce, brown sugar, mustard powder, chili powder, salt, and pepper. Stir well to combine.

        Bring the mixture to a gentle simmer and reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, stirring occasionally.

          Add the frozen mixed vegetables to the stew, stir, and continue to cook for another 5-7 minutes until the vegetables are heated through.

            Taste the stew and adjust seasonings as needed. If you prefer a thicker consistency, let it simmer uncovered for an additional 5 minutes.

              Serve hot, garnished with fresh parsley, over your choice of rice, mashed potatoes, or with crusty bread.
