Ingredients
  

2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 medium onion, finely chopped

4 cloves garlic, minced

1-inch piece of ginger, grated

1 can (15 oz) tomato sauce

1 cup coconut milk

4 tbsp unsalted butter

2 tsp garam masala

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp ground turmeric

1 tsp red chili powder (adjust to taste)

Salt and pepper to taste

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Prepare the Chicken: Season the cut chicken thighs with salt and pepper. Set aside.

    Sauté Onion: In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until translucent, about 5 minutes.

      Add Garlic and Ginger: Stir in the minced garlic and grated ginger. Cook for an additional 1-2 minutes until fragrant.

        Mix Spices: Add the garam masala, cumin, coriander, turmeric, and red chili powder. Stir well to coat the onions, and cook for another minute to toast the spices.

          Combine Ingredients: Transfer the sautéed onion and spice mixture into the slow cooker. Add the tomato sauce, coconut milk, and remaining 2 tablespoons of butter. Stir to combine.

            Add Chicken: Place the seasoned chicken pieces into the slow cooker. Make sure the chicken is well submerged in the sauce. Cover the slow cooker with its lid.

              Cook: Set the slow cooker to low heat and cook for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

                Finish the Dish: Once cooked, taste and adjust seasoning with salt and pepper as necessary. For a creamier texture, you can stir in more coconut milk if desired.

                  Serve: Serve the butter chicken over cooked basmati rice or with warm naan bread. Garnish with fresh cilantro before serving for a burst of freshness.
