Ingredients

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

3 medium potatoes, peeled and diced

3 cups beef broth

1 cup carrots, diced

1 cup celery, diced

1 cup corn (frozen or canned)

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (plus extra for garnish)

1 cup heavy cream

Fresh parsley or chives for garnish

Instructions

In a skillet over medium heat, brown the ground beef alongside the diced onions and minced garlic until the meat is fully cooked. Drain any excess fat.

Transfer the cooked beef mixture to the slow cooker.

Add the diced potatoes, carrots, celery, corn, beef broth, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper into the slow cooker.

Stir all the ingredients together until evenly combined.

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.

Once cooked, stir in the heavy cream and shredded cheddar cheese until melted and creamy.

Adjust seasoning with additional salt and pepper if needed.

Serve hot, garnished with extra cheddar cheese and chopped parsley or chives.
