Ingredients

1.5 lbs boneless, skinless chicken breasts

1 cup long-grain brown rice

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 small onion, diced

3 cloves garlic, minced

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon paprika

1 teaspoon oregano

Salt and pepper to taste

2 cups chicken broth

Juice of 1 lime

1 cup shredded cheddar cheese (optional)

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.

Layer Ingredients: Add the long-grain brown rice on top of the chicken, followed by the black beans, corn, diced tomatoes (with their juices), diced onion, and minced garlic.

Season the Mix: In a small bowl, combine the chili powder, cumin, paprika, oregano, salt, and pepper. Sprinkle the spice mixture evenly over the ingredients in the slow cooker.

Add Liquid: Pour the chicken broth over the entire mixture, ensuring that the rice is submerged. Squeeze the lime juice on top.

Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shredded.

Shred the Chicken: Once cooked, remove the chicken breasts from the slow cooker. Use two forks to shred the chicken, then return it to the pot and stir everything to combine.

Serve: Ladle the burrito bowl mixture into bowls. Top with shredded cheddar cheese, fresh cilantro, and avocado slices for added flavor and a fresh touch.

Enjoy: Serve warm, and enjoy your hearty and flavorful Slow Cooker Chicken Burrito Bowl!
