2 lbs boneless, skinless chicken thighs

4 cups chicken broth

1 can (15 oz) hominy, drained and rinsed

1 medium onion, chopped

4 cloves garlic, minced

1 jalapeño, seeded and finely chopped

1 cup tomatillos, husked and quartered (fresh or canned)

1 cup fresh cilantro, chopped

1 tablespoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt (adjust to taste)

¼ teaspoon black pepper

Juice of 1 lime

Sliced radishes, diced avocado, and lime wedges for garnish

Instructions
 

Prep the Chicken: In a slow cooker, add the chicken thighs and season them with salt, black pepper, cumin, and oregano.

    Add the Vegetables: Layer the chopped onions, minced garlic, jalapeño, and tomatillos over the chicken.

      Pour in the Broth: Pour the chicken broth over all the ingredients, ensuring the chicken is submerged in the liquid.

        Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shreds.

          Shred the Chicken: After cooking, remove the chicken thighs from the slow cooker and shred them with two forks. Return the shredded chicken to the slow cooker along with the drained hominy and chopped cilantro.

            Add Flavor: Stir in the lime juice and let everything heat through for an additional 10-15 minutes. Adjust seasoning if needed.
