Slow Cooker Chicken Taco Filling (Perfect for Meal Prep)

This slow cooker chicken taco filling (perfect for meal prep) is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

2 pounds boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes with green chiles

1 packet taco seasoning (or homemade blend)

1 cup low-sodium chicken broth

1 bell pepper, diced (any color)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish

Tortillas, for serving

Prepare Ingredients: Start by dicing the onion and bell pepper, and mincing the garlic.

    Sauté Aromatics (optional): In a skillet over medium heat, add olive oil. Sauté the onion and garlic until softened (about 3-4 minutes). This step enhances the flavor but can be skipped if you’re short on time.

      Layer in Slow Cooker: Place the chicken breasts at the bottom of the slow cooker. Add the sautéed onion and garlic (if using), black beans, corn, diced tomatoes with green chiles, bell pepper, and taco seasoning.

        Add Chicken Broth: Pour the chicken broth over the mixture, ensuring all ingredients are well combined. Season with salt and pepper to taste.

          Cook: Set the slow cooker to low and cook for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded.

            Shred Chicken: Using two forks, shred the chicken directly in the slow cooker. Stir everything well to combine the flavors.

              Adjust Seasoning: Taste and adjust seasoning if needed. You can add more taco seasoning, salt, or some lime juice for extra zest.

                Serve: Spoon the chicken taco filling into warm tortillas and garnish with fresh cilantro. Enjoy as tacos, burritos, or on top of salads!
