2 lbs beef chuck, cut into 1-inch cubes

4 medium carrots, sliced

3 medium potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 cup red wine (optional, can replace with additional broth)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon fresh thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 tablespoons olive oil

2 tablespoons cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a skillet over medium-high heat, add the olive oil. Season the beef cubes with salt and pepper. Sear them in batches until browned. Transfer the beef to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the chopped onions and minced garlic. Sauté for 2-3 minutes until fragrant and softened. Transfer to the slow cooker.

      Add the Vegetables: Layer the sliced carrots and diced potatoes over the beef and onions in the slow cooker.

        Mix the Liquids: In a bowl, combine beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Mix well.

          Combine Everything: Pour the liquid mixture over the beef and vegetables in the slow cooker. Stir gently to combine.

            Cook: Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.

              Thicken (Optional): For a thicker stew, mix cornstarch with a little cold water to create a slurry. Stir it into the stew in the last 30 minutes of cooking.

                Serve: Once done, taste and adjust seasoning if necessary. Garnish with fresh parsley before serving hot.
