2 lbs (900g) boneless, skinless chicken thighs, cut into chunks

8 oz (225g) cremini mushrooms, sliced

1 large onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 medium potatoes, diced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a skillet, heat olive oil over medium-high heat. Season the chicken chunks with salt and pepper, then add them to the skillet. Sear until golden brown on all sides (about 5-7 minutes). Transfer to the slow cooker.

    Sauté Aromatics: In the same skillet, add diced onion and garlic, and sauté until the onion is translucent (about 3-4 minutes). Pour in a splash of the chicken broth to deglaze the pan, scraping up any browned bits, then transfer the mixture to the slow cooker.

      Combine Remaining Ingredients: Add sliced mushrooms, carrots, potatoes, the remaining chicken broth, heavy cream, thyme, and rosemary into the slow cooker. Stir to combine well. Season with additional salt and pepper to taste.

        Cook: Set the slow cooker on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and the vegetables are cooked through.

          Final Touches: Once cooked, stir the stew and check for seasoning. Adjust if needed. Serve hot, garnished with fresh parsley.
