Slow Cooker Cowboy Stew

Ingredients
  

1 lb ground beef or turkey

1 large onion, diced

3 cloves garlic, minced

3 medium potatoes, diced

2 carrots, sliced

1 bell pepper, diced (red or green)

1 can (15 oz) diced tomatoes (with juices)

1 can (15 oz) kidney beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

4 cups beef broth

1 tbsp Worcestershire sauce

2 tsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, green onions

Instructions
 

In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and transfer to the slow cooker.

    Add the diced onion and minced garlic to the slow cooker. Stir to combine with the meat.

      Layer in the diced potatoes, sliced carrots, and diced bell pepper.

        Pour in the can of diced tomatoes (with their juices), kidney beans, and corn.

          Add the beef broth, Worcestershire sauce, chili powder, cumin, smoked paprika, and season with salt and pepper. Stir everything together until well mixed.

            Cover the slow cooker and set it to low heat. Cook for 6-8 hours, or on high for 3-4 hours, until vegetables are tender.

              Taste and adjust seasonings if necessary. Serve hot, topped with shredded cheese, sour cream, or green onions if desired.
