6 medium Granny Smith apples, peeled, cored, and sliced

1/2 cup brown sugar

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup unsalted butter, melted

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

Pinch of salt

1/4 cup water
