Slow Cooker Garlic Butter Beef with Potatoes

Ingredients
  

2 lbs beef chuck roast, cut into 2-inch cubes

1 lb baby potatoes, halved or quartered

5 cloves garlic, minced

1/2 cup unsalted butter, melted

1 medium onion, chopped

1 cup beef broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

In a large bowl, season the beef cubes with salt, pepper, paprika, thyme, and rosemary. Toss to coat the beef evenly.

    Add the chopped onion to the bottom of the slow cooker, followed by the seasoned beef.

      Place the halved or quartered baby potatoes on top of the beef.

        In a separate small bowl, whisk together the melted butter and minced garlic, then pour this mixture over the beef and potatoes.

          Pour the beef broth over the entire mixture in the slow cooker, ensuring all ingredients are somewhat submerged in the liquid.

            Cover the slow cooker with its lid and set it on low. Cook for 8 hours or on high for 4-5 hours until the beef is tender and the potatoes are cooked through.

              Once cooked, taste and adjust seasoning if necessary.

                Serve hot, garnished with chopped fresh parsley for color and added flavor.
