2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 large onion, diced

4 cloves garlic, minced

4 medium potatoes, diced

3 carrots, sliced

1 cup celery, chopped

1 cup frozen peas

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 tsp dried thyme

2 tsp dried rosemary

Salt and pepper to taste

2 tbsp olive oil

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large skillet over medium heat, add olive oil. Sauté onions and garlic until fragrant and translucent, about 3-4 minutes. Transfer to the slow cooker.

    Layer Ingredients: In the slow cooker, add the diced chicken, potatoes, carrots, celery, and frozen peas. Sprinkle in the thyme, rosemary, salt, and pepper.
