2 pounds boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce (low sodium recommended)

1/4 cup ketchup

4 cloves garlic, minced

1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)

1 teaspoon sesame oil

1 tablespoon cornstarch (optional, for thickening)

Salt and pepper to taste

Instructions
 

Prep the Chicken: Season the chicken thighs with salt and pepper on both sides, then place them in the bottom of a slow cooker.

    Make the Sauce: In a mixing bowl, whisk together honey, soy sauce, ketchup, minced garlic, grated ginger, and sesame oil until well combined.
