Ingredients
  

1 pound ground beef

1 medium onion, diced

1 bell pepper, diced (any color)

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup corn (frozen or canned)

1 packet taco seasoning

1 cup sour cream

2 cups shredded cheddar cheese

10 flour tortillas, cut into quarters

Salt and pepper to taste

Optional garnishes: Green onions, fresh cilantro, or avocado

Instructions
 

Brown the Beef: In a skillet over medium heat, brown the ground beef along with the diced onions, bell pepper, and minced garlic. Cook until the beef is no longer pink and the vegetables have softened. Drain any excess fat.

    Combine Ingredients: In the slow cooker, combine the browned beef mixture, black beans, diced tomatoes (with their juice), corn, and taco seasoning. Stir well to combine. Season with salt and pepper to taste.

      Layer the Tortillas: Place half of the quartered tortillas on top of the beef mixture in the slow cooker. Spread half of the sour cream over the tortillas, followed by half of the cheese.

        Repeat Layers: Repeat the layering process with the remaining tortillas, sour cream, and cheese.

          Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours. The casserole is ready when the cheese is melted and bubbly.

            Serve: Once cooked, serve the casserole hot, garnished with chopped green onions, cilantro, or avocado if desired.
