1 lb ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cans (15 oz each) crushed tomatoes

4 cups beef broth

2 tsp Italian seasoning

1 tsp salt

½ tsp black pepper

8 oz uncooked lasagna noodles, broken into pieces

1 cup ricotta cheese

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil or parsley for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef or sausage until fully cooked. Drain any excess fat and set aside.

    In your slow cooker, add the browned meat, diced onion, minced garlic, and bell pepper. Stir to combine.

      Pour in the crushed tomatoes and beef broth. Add the Italian seasoning, salt, and pepper. Stir until well mixed.

        Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.

          About 30 minutes before serving, stir in the broken lasagna noodles. Cover and let it cook until the noodles are tender.

            In a separate bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, and Parmesan cheese.

              Once the noodles are ready, add the cheese mixture to the soup and stir gently until combined and heated through.

                Serve hot, garnished with fresh basil or parsley and additional mozzarella cheese if desired.
