4 boneless, skinless chicken breasts

1/4 cup fresh lemon juice (about 2 lemons)

1 lemon, sliced

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 tablespoon fresh parsley, chopped

1/2 cup low-sodium chicken broth

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon red pepper flakes (optional, for a kick)

Instructions
 

Begin by preparing the chicken. Place the boneless, skinless chicken breasts in the bottom of your slow cooker. Season both sides generously with salt and pepper.

    In a small mixing bowl, whisk together the lemon juice, minced garlic, olive oil, rosemary, thyme, parsley, and red pepper flakes (if using). Pour this mixture over the chicken, ensuring it's well-coated.

      Add the lemon slices on top of the chicken for added flavor and garnish.

        Pour the chicken broth into the slow cooker around the chicken (not directly on top) to prevent washing away the seasoning.

          Cover the slow cooker with the lid and cook on low for about 4-6 hours, or on high for 2-3 hours, until the chicken is tender and fully cooked.

            Once done, carefully remove the chicken from the slow cooker and let it rest for a few minutes.

              Meanwhile, you can strain the cooking liquid into a small saucepan and bring it to a gentle simmer to reduce it, if desired, for a sauce.

                Serve the chicken hot, drizzled with the reduced sauce and garnished with additional fresh herbs if desired.
