Slow Cooker Queso Chicken Tacos

Ingredients
  

1.5 lbs boneless, skinless chicken thighs

1 can (10 oz) diced tomatoes with green chilies

1 cup of chicken broth

1 packet taco seasoning

1 cup cream cheese (softened)

1 cup shredded cheddar cheese

1 bell pepper (diced)

1 small onion (diced)

Fresh cilantro (for garnish)

Corn or flour tortillas (for serving)

Sliced jalapeƱos (optional, for serving)

Instructions
 

Prepare the Chicken: Place the chicken thighs at the bottom of the slow cooker.

    Add the Seasonings: Pour the diced tomatoes (with their juice), chicken broth, and taco seasoning over the chicken.

      Toss in Veggies: Add the diced bell pepper and onion on top. Stir gently to combine.

        Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and shreds easily with a fork.

          Create the Queso: Once cooked, shred the chicken directly in the slow cooker using two forks. Add the softened cream cheese and shredded cheddar cheese to the mixture. Stir until melted and creamy.

            Serve: Warm the tortillas in a skillet or microwave. Spoon the queso chicken mixture onto each tortilla. Garnish with fresh cilantro and jalapeƱos if desired.

              Enjoy: Serve immediately, letting everyone build their own tacos!
