Slow Cooker Salisbury Steak Meatballs

1 lb ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

2 cups beef broth

1 cup sliced mushrooms

1 medium onion, finely chopped

2 tbsp Worcestershire sauce

1 tbsp soy sauce

1 tbsp cornstarch mixed with 2 tbsp cold water (for thickening)

Prepare the Meatballs: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix until fully combined.

    Form Meatballs: Shape the mixture into meatballs, about 1 1/2 inches in diameter. You should get around 16-20 meatballs.

      Brown the Meatballs: (Optional) Heat a skillet over medium heat and sear the meatballs on all sides for 2-3 minutes until browned. This step adds extra flavor, but you can skip it and place them directly into the slow cooker.

        Add Ingredients to Slow Cooker: Place the meatballs in the slow cooker. In a separate bowl, combine the beef broth, sliced mushrooms, chopped onion, Worcestershire sauce, and soy sauce. Pour this mixture over the meatballs in the slow cooker.

          Cook: Set the slow cooker on low and cook for 6-8 hours or on high for 3-4 hours, until meatballs are cooked through and tender.

            Thicken the Sauce: About 30 minutes before serving, stir in the cornstarch slurry (cornstarch mixed with water) to thicken the sauce. Mix well and let it cook for the remaining time.

              Serve: Once finished, serve the Salisbury steak meatballs over mashed potatoes, egg noodles, or rice with a generous scoop of the thickened gravy. Garnish with additional parsley if desired.
