1 lb boneless, skinless chicken thighs

1/2 cup Caesar dressing

1 cup romaine lettuce, chopped

1/4 cup grated Parmesan cheese

1/2 cup cherry tomatoes, halved

1 avocado, sliced

8 small soft taco tortillas

Salt and pepper to taste

Olive oil for cooking

Prepare the Chicken: Season the chicken thighs with salt and pepper. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the chicken thighs and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from heat and let rest for a few minutes.
