Ingredients
  

  • 4 large eggs for boiling
  • 2 ripe avocados halved and pitted
  • 1 teaspoon lemon juice freshly squeezed

  • 1/4 teaspoon black pepper freshly ground
  • 4 slices sourdough bread thickly sliced
  • 2 tablespoons extra virgin olive oil for toasting
  • 1/2 teaspoon red pepper flakes for garnish

Instructions
 

  • Place a pot of water on high heat and bring it to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled or 9-10 minutes for hard-boiled eggs. Once done, transfer them to an ice bath to stop the cooking process.
  • While the eggs are cooling, toast the sourdough bread slices in a skillet with olive oil over medium heat until golden brown and crispy on both sides, about 3-4 minutes per side.
  • In a bowl, scoop out the flesh of the avocados and add lemon juice, sea salt, and black pepper. Mash the avocados with a fork until creamy but still slightly chunky for texture.
  • Peel the cooled eggs and slice them in half. For the smashed egg component, gently press the egg halves with a fork to create a rough texture. Season with a pinch of salt and pepper to taste.
  • Spread a generous amount of the mashed avocado on each slice of toasted sourdough. Top with the smashed eggs, arranging them attractively for a beautiful presentation.
  • Sprinkle red pepper flakes over the top for a hint of spice and add microgreens for an added crunch and freshness.
