Ingredients
  

  • 2 pounds baby Yukon Gold potatoes washed and halved
  • 1 tablespoon sea salt for boiling water
  • 1/2 teaspoon black pepper freshly cracked
  • 3 cloves garlic minced for aioli
  • 1 cup mayonnaise for aioli base
  • 2 tablespoons lemon juice freshly squeezed for aioli
  • 2 tablespoons extra virgin olive oil for drizzling
  • 1 teaspoon dried oregano for seasoning the potatoes
  • 1 teaspoon smoked paprika for extra flavor
  • salt and pepper to taste

Instructions
 

  • In a large pot, bring water to a boil and add sea salt. Add the halved baby Yukon Gold potatoes and cook until fork-tender, approximately 15-20 minutes.
  • Preheat your oven to 425°F (220°C). Drain the potatoes and let them cool for a few minutes. Once cool enough to handle, place them on a baking sheet lined with parchment paper.
  • Using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact. Drizzle with olive oil and sprinkle with black pepper, oregano, and smoked paprika.
  • Bake the smashed potatoes in the preheated oven for about 20-25 minutes, or until crispy and golden brown, turning them halfway through for even cooking.
  • While the potatoes are baking, prepare the garlic aioli by combining the minced garlic, mayonnaise, lemon juice, and a pinch of salt and pepper in a bowl. Mix well until smooth and creamy.
  • Remove the potatoes from the oven and let them cool slightly before serving. Serve warm with the garlic aioli on the side for dipping.

Tip 1: For extra crispy potatoes, ensure they are well-drained after boiling and dry them with a paper towel before smashing.
