1 lb Italian sausage (hot or mild, based on preference)

1 bell pepper (red or yellow), sliced

1 onion, sliced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes with herbs

1 cup fresh spinach, chopped

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil, for garnish

Crusty bread or hoagie rolls (for serving)

Preheat your smoker: Get your smoker ready at a temperature of around 225°F (107°C). Use wood chips like hickory or applewood for added flavor.

    Prepare the sausage: If using links, make a few shallow slashes in the Italian sausage to help release the flavors while smoking.

      Smoke the sausage: Place the sausage directly on the smoker grate. Smoke for about 1-1.5 hours or until the internal temperature reaches 160°F (71°C).

        Sauté the vegetables: While the sausage is smoking, heat the olive oil in a large skillet over medium heat. Add the sliced onion and bell pepper, cooking until they are softened and fragrant, about 5-7 minutes. Add the minced garlic and cook for an additional minute.

          Add the tomatoes and spices: Stir in the diced tomatoes, smoked paprika, dried oregano, salt, and pepper. Allow the mixture to simmer for 10 minutes, letting the flavors meld together.

            Combine the spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

              Add the smoked sausage: Once the sausage is done smoking, slice it into bite-sized pieces and fold it into the vegetable mixture. Stir until everything is well combined and heated through.
