Ingredients

1 French baguette, sliced into 1/2-inch rounds

8 oz smoked salmon

4 oz cream cheese, softened

2 tbsp sour cream

1 tbsp fresh dill, chopped (plus extra for garnish)

1 tbsp capers, drained

1 lemon, zested and juiced

1 tsp onion powder

Freshly cracked black pepper, to taste

Olive oil, for brushing

Arugula or microgreens, for garnish

Instructions

Preheat Oven: Preheat your oven to 400F (200C).

Prepare the Baguette: Arrange the baguette slices on a baking sheet. Brush each side lightly with olive oil and sprinkle with a pinch of salt.

Toast the Bread: Bake in the preheated oven for about 8-10 minutes, or until golden and crispy. Remove from the oven and let cool slightly.

Make the Cream Cheese Mixture: In a mixing bowl, combine the softened cream cheese, sour cream, dill, capers, lemon zest, lemon juice, onion powder, and a few grinds of black pepper. Mix until smooth and well combined.

Assemble the Crostini: Spread a generous amount of the cream cheese mixture onto each toasted baguette slice. Top with pieces of smoked salmon.

Garnish: Finish with a sprinkle of fresh dill and a few arugula leaves or microgreens for color and freshness.

Serve: Arrange the crostini on a serving platter and serve immediately while the bread is still warm.
