Ingredients
  

  • 1 large English cucumber thinly sliced lengthwise
  • 6 ounces smoked salmon sliced
  • 4 ounces cream cheese softened
  • 2 tablespoons capers drained and chopped
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon lemon juice freshly squeezed
  • 1/2 teaspoon black pepper freshly cracked
  • salt to taste

Instructions
 

  • Start by preparing the cucumber. Use a vegetable peeler or mandoline to slice the English cucumber into long, thin strips, approximately 1/8 inch thick. Lay the slices on paper towels to absorb excess moisture.
  • In a mixing bowl, combine the softened cream cheese, chopped capers, fresh dill, lemon juice, and black pepper. Mix thoroughly until smooth and well combined.
  • Lay out one cucumber strip on a clean surface. Spread a thin layer of the cream cheese mixture over the entire strip, leaving a little space at the ends.
  • Place a slice of smoked salmon at one end of the cucumber strip, then roll it tightly away from you. Secure with a toothpick if necessary. Repeat the process with the remaining cucumber strips, cream cheese mixture, and smoked salmon.
  • Once all rolls are prepared, arrange them on a serving platter. You can garnish with additional dill or lemon zest for added flavor and presentation.
