1 pound smoked sausage (sliced into rounds)

1 pound baby potatoes (halved or quartered)

1 medium onion (sliced)

3 cloves garlic (minced)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a large bowl, mix the halved baby potatoes with olive oil, smoked paprika, thyme, salt, and pepper. Toss until well coated.
