1 lb smoked sausage (sliced into rounds)

4 medium potatoes (diced into 1-inch cubes)

1 medium onion (chopped)

2 cloves garlic (minced)

1 bell pepper (diced)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Optional: grated cheese (for topping)

Instructions
 

Preheat and Prepare: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the diced potatoes and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until they begin to soften and are golden brown.

    Add Sausage and Vegetables: Push the potatoes to one side of the skillet. Add the sliced smoked sausage, chopped onion, and diced bell pepper to the other side. Drizzle with the remaining olive oil, then sprinkle the smoked paprika, dried thyme, and garlic powder over everything.

      Mix and Cook: Stir everything together, combining the potatoes, sausage, and vegetables. Cook for an additional 10-15 minutes, stirring occasionally, until the sausage is heated through, the veggies are tender, and the potatoes are fully cooked.

        Incorporate Garlic: Add the minced garlic to the skillet and cook for another 2-3 minutes, until fragrant.

          Finish and Serve: Taste and adjust the seasoning with more salt and pepper if needed. If desired, sprinkle grated cheese on top and cover for a minute until melted. Garnish with fresh parsley before serving warm.
