1 pound smoked sausage, sliced into rounds

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

2 cloves garlic, minced

2 cups zucchini, sliced

1 cup corn (fresh or frozen)

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a large skillet over medium heat.

    Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Stir occasionally to ensure even cooking.

      Add the chopped onion, diced bell peppers, and minced garlic to the skillet. Sauté for 3-4 minutes until the vegetables are softened.

        Stir in the sliced zucchini and corn, cooking for an additional 5 minutes until the zucchini is tender.

          Season the mixture with smoked paprika, Italian seasoning, salt, and pepper. Mix well and cook for another 2-3 minutes, allowing the flavors to meld together.

            Remove from heat, garnish with chopped fresh parsley, and serve hot.
