Ingredients
  

  • 4 medium Yukon Gold potatoes peeled and cut into 1-inch cubes
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon cumin
  • 3 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper freshly cracked
  • 1/4 teaspoon cayenne pepper optional for heat
  • 2 tablespoons fresh parsley chopped for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C). Prepare a large baking sheet by lining it with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the cubed Yukon Gold potatoes, smoked paprika, cumin, minced garlic, onion powder, olive oil, sea salt, black pepper, and cayenne pepper. Toss until the potatoes are evenly coated with the seasoning.
  • Spread the seasoned potato cubes in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure maximum crispiness.
  • Roast the potatoes in the preheated oven for 25 minutes, flipping them halfway through to ensure even cooking. They should be golden brown and crispy on the outside.
  • Once done, remove the baking sheet from the oven and let the potatoes cool for a couple of minutes. Garnish with chopped fresh parsley before serving.

Tip 1: For extra crunch, consider soaking the potato cubes in cold water for 30 minutes before seasoning and roasting.
Tip 2: Store any leftovers in an airtight container in the fridge for up to 3 days; reheat in the oven to restore crispiness.
