2 cups fresh apples, peeled and sliced

1 tablespoon lemon juice

1/2 cup brown sugar

1 teaspoon cinnamon

1 cup all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1 cup milk

1 teaspoon vanilla extract

1/4 cup sugar (for topping)

1 tablespoon cinnamon (for topping)

Optional: whipped cream or vanilla ice cream for serving

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.

    Prepare the apples: In a mixing bowl, toss the sliced apples with lemon juice, brown sugar, and 1 teaspoon of cinnamon. Spread the apple mixture evenly in the bottom of the prepared baking dish.

      Make the batter: In a separate large bowl, whisk together the flour, granulated sugar, baking powder, and salt. In another bowl, combine the melted butter, milk, and vanilla extract, then pour this mixture into the dry ingredients. Stir until just combined (a few lumps are okay).

        Pour the batter over the apples in the baking dish, spreading it evenly.

          Mix the topping: In a small bowl, mix together the 1/4 cup of sugar and 1 tablespoon of cinnamon. Sprinkle this mixture evenly over the batter.

            Bake in the preheated oven for about 35-40 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Serve warm: Let the cobbler cool for a few minutes before serving. Top with whipped cream or vanilla ice cream if desired.
