Ingredients
  

1 cup unsalted butter, softened

1 ½ cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ¾ cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

½ teaspoon salt

½ cup granulated sugar (for rolling)

2 teaspoons ground cinnamon

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and 1 ½ cups of granulated sugar together until light and fluffy, about 3-4 minutes.

      Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add this mixture to the wet ingredients, blending until a soft dough forms.

          Prepare Cinnamon Sugar: In a small bowl, combine ½ cup of granulated sugar with the ground cinnamon. Mix well and set aside.

            Form the Bites: Scoop out small tablespoon-sized portions of dough and roll them into balls.

              Roll in Cinnamon Sugar: Roll each dough ball in the cinnamon sugar mixture until well coated.

                Bake: Place the coated dough balls on the prepared baking sheet about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.

                  Cool: Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

                    Serve: Enjoy them warm, or store them in an airtight container for later!
