2 teaspoons ground ginger

1 teaspoon ground cinnamon

½ teaspoon ground cloves

1 teaspoon baking soda

¼ teaspoon salt

¾ cup unsalted butter, softened

1 cup packed brown sugar

1 large egg

1 tablespoon molasses

1 teaspoon vanilla extract

½ cup granulated sugar (for rolling)

Preheat your oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.

    Mix dry ingredients: In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt. Set the mixture aside.

      Cream the butter and sugar: In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.

        Add egg, molasses, and vanilla: Add the egg, molasses, and vanilla extract to the butter mixture. Beat until all the ingredients are combined well.

          Combine wet and dry ingredients: Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix; you want to maintain the softness.
