2 lbs ripe tomatoes, halved

1 red onion, quartered

4 cloves garlic, peeled

1 red bell pepper, halved

2 tbsp olive oil

Salt and pepper, to taste

1 tsp red pepper flakes (adjust for spice preference)

4 cups vegetable broth

1 tsp sugar (to balance acidity)

1/2 cup fresh basil leaves, plus extra for garnish

1/2 cup heavy cream (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    On a large baking sheet, place the halved tomatoes, quartered red onion, garlic cloves, and halved red bell pepper. Drizzle with olive oil and season with salt, pepper, and red pepper flakes. Toss to coat evenly.

      Roast in the preheated oven for 25-30 minutes, until the vegetables are caramelized and tender.

        Remove from the oven and let cool slightly. Transfer the roasted vegetables to a blender or food processor. Add the vegetable broth and sugar, and blend until smooth.

          Pour the blended soup into a large pot over medium heat. Stir in the fresh basil and bring to a gentle simmer. If desired, stir in the heavy cream for a richer flavor.

            Allow the soup to simmer for about 10 minutes, stirring occasionally. Taste and adjust seasonings if needed.

              Serve hot, garnishing each bowl with extra basil leaves and a drizzle of olive oil if desired.
