Ingredients

4 bone-in pork chops (about 1 inch thick)

1 cup buttermilk

1 tablespoon hot sauce (optional)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to taste)

Vegetable oil (for frying)

Instructions

Marinate the Pork Chops: In a large bowl, combine the buttermilk and hot sauce. Submerge the pork chops in the mixture, cover, and refrigerate for at least 2 hours or overnight for best results. This will tenderize the meat and add flavor.

Prepare the Coating: In a separate shallow dish, whisk together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Ensure that it’s mixed well to evenly distribute the spices.

Heat the Oil: In a large cast-iron skillet or deep frying pan, pour enough vegetable oil to cover the bottom about ½ inch deep. Heat the oil over medium heat until it reaches approximately 350°F (175°C). You can check the temperature by dropping a small amount of the flour mixture into the oil; it should sizzle immediately.

Coat the Chops: Remove the marinated pork chops from the buttermilk, letting the excess drip off. Dredge each chop in the seasoned flour mixture, pressing firmly to ensure an even coating. Shake off the excess flour.

Fry the Pork Chops: Carefully place the coated chops into the hot oil, cooking in batches if necessary to avoid overcrowding. Fry each side for about 4-5 minutes, or until golden brown and crisp. The internal temperature should reach 145°F (63°C). Adjust the heat as needed to maintain a consistent frying temperature.

Drain and Rest: Once done, use tongs to remove the pork chops from the skillet and place them on a paper towel-lined plate to drain any excess oil. Let them rest for about 5 minutes.

Serve: Plate the crispy fried pork chops with your favorite southern sides such as collard greens, mashed potatoes, or cornbread. Enjoy your delicious Southern Comfort Country Fried Pork Chops!
