4 pounds whole chicken, cut into pieces

2 cups buttermilk

2 cups all-purpose flour

1 tablespoon paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (adjust for heat)

1 teaspoon black pepper

1 teaspoon salt

Vegetable oil for frying

Marinate the Chicken: In a large bowl, combine the chicken pieces with buttermilk. Ensure each piece is well-coated. Cover and refrigerate for at least 4 hours, or overnight for the best flavor and tenderness.

    Prepare the Coating: In a separate bowl, mix the flour, paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Whisk until well combined.

      Dredge the Chicken: Remove the chicken from the buttermilk, shaking off excess. Dredge each piece in the seasoned flour mixture, pressing it firmly into the flour to ensure it sticks well. Shake off excess flour and set aside on a rack.

        Heat the Oil: In a large cast-iron skillet or deep fryer, add enough vegetable oil to cover the bottom of the pan to a depth of about 1 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small piece of batter into the oil; if it bubbles and rises, it's ready.
