2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup buttermilk

3 large eggs

1 tablespoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon salt

2 cups fresh peaches, peeled and diced (or canned peaches, drained)

For the Crumb Topping:

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/2 cup cold unsalted butter, cut into small cubes

1/2 cup chopped pecans (optional)

For Serving:

Whipped cream or vanilla ice cream (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

    Prepare the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

      Mix the Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt.

        Combine Wet and Dry Ingredients: Gradually add the dry mixture to the creamed mixture, alternating with the buttermilk. Start and end with the flour mix. Stir until just combined; be careful not to overmix.

          Fold in Peaches: Gently fold the diced peaches into the batter and pour the mixture into the prepared baking dish.

            Prepare the Crumb Topping: In a separate bowl, combine the flour, brown sugar, and cinnamon. Add the cold butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Stir in the chopped pecans if using.

              Add the Topping: Sprinkle the crumb topping evenly over the batter in the baking dish.
