1 pound red kidney beans, soaked overnight

8 cups water (for cooking beans)

1 tablespoon olive oil

1 medium onion, finely chopped

1 bell pepper, diced (preferably green)

2 celery stalks, diced

4 cloves garlic, minced

1 smoked sausage (like andouille), sliced

1 tablespoon Creole seasoning

1 teaspoon dried thyme

2 bay leaves

1/2 teaspoon cayenne pepper (adjust based on spice preference)

Salt and black pepper to taste

3 cups cooked white rice

Chopped green onions for garnish

Hot sauce (optional, for serving)

Instructions
 

Prep the Beans: Drain the soaked red kidney beans and rinse them under cold water. Set aside.

    Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5-7 minutes, or until the vegetables are tender.

      Add Garlic and Sausage: Stir in the minced garlic and sliced smoked sausage. Cook for an additional 2-3 minutes until the sausage starts to brown.

        Combine Ingredients: Add the soaked red kidney beans, water, Creole seasoning, thyme, bay leaves, cayenne pepper, salt, and black pepper to the pot. Stir well to combine.

          Cook the Beans: Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 to 2 hours or until the beans are tender. Stir occasionally, adding more water if necessary to prevent sticking.

            Final Touches: Once the beans are cooked, remove the bay leaves. Use a potato masher to mash a portion of the beans in the pot to thicken the dish if desired. Adjust seasoning to taste.

              Serve: Spoon the red beans mixture over a mound of warm cooked white rice. Garnish with chopped green onions and serve with hot sauce on the side, if desired.
