Southwest Chicken Wraps are a quick and flavorful meal that combines tender chicken, zesty spices, and fresh vegetables, all wrapped up in a tortilla. Perfect for a busy weeknight or a quick lunch, these wraps are packed with protein and taste, making them a satisfying choice for any meal.

Ingredients
  

  • 2 cups cooked and shredded chicken breast preferably rotisserie for convenience
  • 1 tablespoon Southwest seasoning store-bought or homemade
  • 1/2 teaspoon cumin
  • 3 cloves garlic minced
  • 1 cup fresh corn can use canned or frozen
  • 1 cup black beans drained and rinsed
  • 2 tablespoons fresh cilantro chopped
  • 1 cup shredded cheddar cheese or Mexican blend
  • 4 large flour tortillas 10-inch size
  • salt and pepper to taste

Instructions
 

  • In a large skillet over medium heat, add the shredded chicken, minced garlic, Southwest seasoning, cumin, corn, and black beans. Stir well to combine and cook for about 5-7 minutes until heated through.
  • Once the chicken mixture is heated, taste and season with salt and pepper as needed. Remove from heat and stir in the chopped cilantro.
  • Warm the flour tortillas in a dry skillet for about 30 seconds on each side until pliable. This will make them easier to wrap.
  • To assemble the wraps, place a generous portion of the chicken mixture in the center of each tortilla. Sprinkle with shredded cheese and top with avocado slices.
  • Fold in the sides of the tortilla and then roll from the bottom up to secure the filling. Repeat with remaining tortillas.
  • Slice each wrap in half diagonally and serve immediately with your choice of salsa or sour cream.

Notes

Tip 1: For extra flavor, marinate the chicken in lime juice and spices before cooking.
Tip 2: These wraps can be made ahead of time and stored in the fridge for up to 2 days.
Variation: Try adding roasted red peppers or jalapeños for an extra kick.
