400g spaghetti

6 cloves garlic, thinly sliced

1/2 cup extra virgin olive oil

2-3 red chili peppers, sliced (adjust to taste)

1/4 cup fresh parsley, chopped

1/2 teaspoon salt (to taste)

1/4 teaspoon freshly ground black pepper

Zest of 1 lemon

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Spaghetti: In a large pot of salted boiling water, add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Garlic and Chili Infusion: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and let it sizzle, stirring frequently, until the garlic turns golden brown. Be careful not to burn it.

      Add the Chili Peppers: Once the garlic is aromatic and golden, add the sliced chili peppers to the skillet and stir for about 1-2 minutes until fragrant.

        Combine Pasta and Infusion: Add the drained spaghetti to the skillet with the garlic and chili oil. Toss to coat the pasta evenly, adding reserved pasta water a little at a time until you achieve a creamy consistency.

          Season the Dish: Stir in the chopped parsley, lemon zest, salt, and black pepper. Toss again to combine all the flavors.

            Serve: Plate the spaghetti and drizzle with a little more olive oil if desired. Top with grated Parmesan cheese if using, and serve immediately.
