8 oz (225g) spaghetti

2 cups fresh spinach, packed

1 cup sun-dried tomatoes, julienned (preferably in oil)

3 cloves garlic, minced

1 small onion, finely chopped

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil, for garnish

Optional: Extra grated Parmesan for serving

Instructions
 

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the spaghetti and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.

      Add Sun-Dried Tomatoes: Stir in the julienned sun-dried tomatoes and cook for another 2-3 minutes, allowing their flavors to infuse into the oil.

        Incorporate Spinach: Add the fresh spinach to the skillet, stirring until wilted down, which should take about 2-3 minutes. Season with salt and pepper to taste.

          Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream, stirring it well with the vegetable mixture. Bring to a gentle simmer and allow it to thicken slightly for about 2-3 minutes.

            Combine with Spaghetti: Gradually add the cooked spaghetti to the skillet, tossing to coat all the pasta in the creamy sauce. If the sauce is too thick, add a splash of the reserved pasta water to achieve your desired consistency.

              Finish with Cheese: Stir in the grated Parmesan cheese, allowing it to melt and enhance the sauce. Adjust seasoning as needed.

                Serve: Divide the pasta among plates or bowls, garnishing with fresh basil and additional grated Parmesan, if desired.
