4 medium zucchinis

1 lb ground chicken (or shredded rotisserie chicken)

1/2 cup buffalo sauce (adjust to taste)

1/2 cup cream cheese, softened

1/2 cup shredded sharp cheddar cheese

1/4 cup diced green onions

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper to taste

Cooking spray or olive oil for greasing

Optional: Blue cheese dressing for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a baking dish with cooking spray or olive oil.

    Prepare the Zucchini: Wash the zucchinis and slice them in half lengthwise. Using a spoon, scoop out the seeds and some of the flesh to create a boat shape. Set aside the scooped-out zucchini for later use.

      Cook the Chicken: In a skillet over medium heat, add the ground chicken (or shredded chicken) and cook until browned and cooked through, about 5-7 minutes. Break it up with a spatula as it cooks.

        Mix the Filling: In a large bowl, combine the cooked chicken, buffalo sauce, softened cream cheese, 1/4 cup of cheddar cheese, diced green onions, garlic powder, onion powder, salt, and pepper. Mix everything until well combined.

          Fill the Zucchini Boats: Spoon the buffalo chicken mixture generously into each zucchini boat, pressing slightly to pack it in. Place the filled zucchini in the prepared baking dish.

            Bake: Sprinkle the remaining 1/4 cup of cheddar cheese on top of the filled zucchini boats. Bake in the preheated oven for 25-30 minutes or until the zucchini is tender and the cheese is bubbly and slightly golden.

              Garnish and Serve: Remove from oven and let cool slightly. Drizzle with blue cheese dressing if desired and garnish with extra green onions. Serve warm.
