Spicy Cajun Garlic Butter Sausage Pasta

8 oz fettuccine or your choice of pasta

1 lb smoked sausage or andouille sausage, sliced

4 tbsp unsalted butter

6 cloves garlic, minced

1 medium onion, diced

1 bell pepper (red or yellow), diced

1 tsp Cajun seasoning

½ tsp red pepper flakes (adjust for heat preference)

1 cup cherry tomatoes, halved

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Sauté the Sausage: In a large skillet over medium heat, add the sliced sausage and cook until browned and heated through, about 4-5 minutes. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.

      Make the Garlic Butter: In the same skillet, add the butter and allow it to melt. Once melted, add the minced garlic, diced onion, and bell pepper. Sauté until the vegetables are softened, about 3-4 minutes.

        Add Seasonings: Sprinkle in the Cajun seasoning and red pepper flakes, stirring until fragrant, about 1 minute.

          Combine Ingredients: Return the cooked sausage to the skillet, then add the halved cherry tomatoes. Stir everything together, allowing the tomatoes to soften for a couple of minutes.

            Creamy Mixture: Pour in the heavy cream and bring to a gentle simmer. Let it cook for about 3-4 minutes, stirring occasionally, until the sauce thickens slightly.

              Combine with Pasta: Add the cooked pasta to the skillet. Toss to coat the pasta evenly in the sauce. If the pasta seems too dry, add a little of the reserved pasta water until you reach your desired consistency.

                Finish & Serve: Stir in the grated Parmesan cheese until melted and combined. Season with salt and pepper to taste. Remove from heat and garnish with chopped parsley.
