6 large eggs

2 tablespoons mayonnaise

1 tablespoon sour cream

1 teaspoon Dijon mustard

1 teaspoon chili paste or sriracha (adjust to taste)

1 garlic clove, minced

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Red pepper flakes (optional, for garnish)

Instructions
 

Boil the eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pan and remove it from the heat. Let the eggs sit for 12-15 minutes.

    Cool the eggs: After the time has elapsed, transfer the eggs to an ice bath or run them under cold water until they are completely cooled, about 5-10 minutes.

      Peel the eggs: Carefully tap the eggs on a hard surface to crack the shell and peel them under running water for ease.

        Prepare the filling: Cut the peeled eggs in half lengthwise and gently scoop the yolks into a medium mixing bowl, placing the egg whites on a serving platter.

          Mix the filling: To the bowl with the yolks, add mayonnaise, sour cream, Dijon mustard, chili paste, minced garlic, smoked paprika, and a pinch of salt and pepper. Mash together until smooth and creamy.

            Fill the egg whites: Using a spoon or piping bag, fill the empty egg whites with the spicy yolk mixture.
