Spicy Garlic Shrimp Noodles

8 ounces of rice noodles

1 pound large shrimp, peeled and deveined

3 tablespoons sesame oil

6 cloves garlic, minced

1 tablespoon ginger, grated

2 teaspoons red pepper flakes (adjust to taste)

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon lime juice (freshly squeezed)

1/2 cup green onions, chopped

1/2 cup bell peppers, thinly sliced (red or yellow)

1/4 cup cilantro, chopped (for garnish)

Salt and pepper, to taste

Cook the Noodles: Begin by cooking the rice noodles according to the package instructions. Drain and set aside, tossing with a little sesame oil to prevent sticking.

    Prepare the Shrimp: In a large bowl, season the shrimp with salt, pepper, and red pepper flakes. Toss to coat evenly.

      Sauté Aromatics: In a large skillet or wok, heat 2 tablespoons of sesame oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

        Cook the Shrimp: Increase the heat to high and add the seasoned shrimp to the skillet. Cook for 2-3 minutes, or until the shrimp turn pink and opaque, stirring frequently. Remove the shrimp and set aside on a plate.

          Veggies Time: In the same skillet, add the remaining sesame oil, sliced bell peppers, and half of the green onions. Stir-fry for about 2-3 minutes until the peppers are slightly tender.

            Combine Everything: Return the shrimp to the skillet and add the cooked noodles, soy sauce, oyster sauce, and lime juice. Toss everything together until well combined and heated through.
