2 lbs boneless chicken thighs

1/4 cup gochujang (Korean chili paste)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon sesame oil

1 cup coconut milk

1/2 teaspoon black pepper

Salt to taste

3 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: Rinse the chicken thighs under cold water and pat dry with paper towels. Season lightly with salt and black pepper.

    Make the Gochujang Glaze: In a mixing bowl, combine gochujang, soy sauce, honey, rice vinegar, minced garlic, minced ginger, and sesame oil. Whisk until smooth and well combined.

      Slow Cooking Setup: Place the chicken thighs in the bottom of your slow cooker. Pour the gochujang glaze over the chicken, covering it evenly.

        Add Coconut Milk: Pour the coconut milk over the chicken and glaze. This will add creaminess and balance the spices.

          Cook: Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.

            Shred the Chicken: Once cooked, shred the chicken thighs using two forks right in the slow cooker and mix it with the remaining sauce.

              Serve: Scoop the spicy gochujang glazed chicken into bowls, and sprinkle with sliced green onions and sesame seeds for garnish. Serve over rice or noodles for a complete meal.
