Spicy Halal Chicken & Rice Bowls

Ingredients
  

  • 1.5 pounds chicken breast cut into bite-sized pieces
  • 1.5 cups basmati rice rinsed
  • 2 tablespoons olive oil for cooking
  • 3 cloves garlic minced
  • 1 tablespoon spicy paprika for seasoning
  • 3 cups vegetable broth for cooking rice

Instructions
 

  • In a large skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant.
  • Add the chicken pieces to the skillet and season with spicy paprika, cooking until browned and cooked through, about 10-12 minutes.
  • While the chicken is cooking, bring vegetable broth to a boil in a separate pot and add the rinsed basmati rice.
  • Reduce heat to low, cover the pot, and let the rice simmer for about 15 minutes or until all the liquid is absorbed.
  • Once the chicken and rice are cooked, serve the chicken over a bed of rice in bowls, garnishing with additional spices if desired.

Notes

For extra flavor, add a squeeze of lemon juice or serve with a side of hot sauce. Leftovers can be stored in the refrigerator for up to 3 days.
