1 lb boneless, skinless chicken breast, diced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 jalapeos, diced (seeds removed for less heat)

1 cup cream cheese, softened

4 cups chicken broth

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese, plus more for topping

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Saut the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken breast and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook the Vegetables: In the same pot, add the diced onion, garlic, and jalapeos. Saut for about 3-4 minutes until the onion is translucent and the jalapeos are soft.
