2 cups sushi rice

2 1/2 cups water

1/4 cup rice vinegar

2 tablespoons sugar

1 tablespoon salt

1 pound sushi-grade salmon, skinless and diced

1/2 cup mayonnaise (preferably Kewpie)

2 tablespoons sriracha (adjust for spice level)

1 tablespoon soy sauce

1 teaspoon sesame oil

1 green onion, chopped

1 tablespoon furikake (Japanese rice seasoning)

1 cup seaweed sheets, cut into strips

1 avocado, diced (optional)

Pickled ginger and wasabi, for serving

Instructions
 

Prepare the Rice: Rinse the sushi rice under cold water until the water runs clear. In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker's instructions or bring to a boil, then cover and simmer on low for 15-20 minutes until all the water is absorbed. Let it sit covered for 10 minutes.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spoon or spatula. Allow the rice to cool to room temperature.

      Make the Spicy Salmon Mixture: In a bowl, combine diced salmon, mayonnaise, sriracha, soy sauce, sesame oil, and half of the chopped green onion. Mix well to coat the salmon evenly.

        Assemble the Bake: Preheat your oven to 350°F (175°C). In a greased baking dish (an 8x8 inch dish works well), spread the seasoned sushi rice in an even layer. Top the rice with the spicy salmon mixture, spreading it evenly over the rice.

          Bake: Place the baking dish in the oven and bake for about 15-20 minutes, or until the top is slightly golden and bubbly.

            Garnish: Remove from the oven and sprinkle the remaining green onion and furikake on top. Optional: add diced avocado for a creamy texture.

              Serve: Let the sushi bake cool slightly before cutting into squares. Serve with seaweed strips for wrapping, and offer pickled ginger and wasabi on the side for that extra kick.
