1 lb spicy Italian sausage (casings removed)

1 medium head of cauliflower, cut into florets

3 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with 2 tablespoons of olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until evenly coated.

      Roast the Cauliflower: Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for about 20 minutes, or until tender and golden brown, turning halfway through for even cooking.

        Cook the Sausage: While the cauliflower is roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the spicy sausage, breaking it up with a wooden spoon, and cook until browned and cooked through, about 6-8 minutes.

          Combine Ingredients: Once the cauliflower is roasted, carefully add it to the skillet with the cooked sausage. Sprinkle in the fresh thyme and stir everything together gently, allowing the flavors to meld for an additional 2-3 minutes on low heat.
